We all love pumpkin picking and carving, but don’t put the insides in the bin – make a delicious meal instead!

The Proud Sicilian have shared their Halloween inspired recipe for Risotto alla Zucca e Fichi (Pumpkin and Fig Risotto) for you to try at home. This serves a family of four.

Ingredients:

200g Arborio Rice

400g Zucca (pumpkin)

150g Gorgonzola

50g Parmigiano Reggiano

5 Fresh Figs

150g salted butter

1 onion, finely chopped

Extra virgin olive oil

One glass of white wine

Salt and pepper

To make:

Dice the pumpkin and remove the seeds 

Put diced pumpkin into a pot and add one litre of water

Bring to the boil and cook for 45 mins (until the pumpkin becomes soft)

Mix the contents well, until it become a thick creamy broth

In a saucepan, add two tablespoons of extra virgin olive oil

Add 100g of butter (salted)

Add a finely chopped onion and put on a medium heat

Once the onion is caramelising introduce the arborio rice

Add one glass of white wine 

Gradually pour in the creamy pumpkin broth and mix

Add Salt and Pepper

Cook for 15 minutes 

Remove the fig peel and and slice the fig (doesn’t need to look pretty as you’re about to mash it together with the Gorgonzola)

Add the fig and Gorgonzola mix to the risotto and cook for a further 10 minutes

Introduce 50g of butter and 50g of Parmigiano Reggiano and cook for a further 5 minutes.
